QF Focus Magazine Recipes by Pushpa from the Spice Hut


- Cashew and vegetable curry shah This is a thick creamy mild dish similar to korma. You can make it more flavoursome by adding garam masala and chillies.


Ingredients


5 tbsp natural cashew soaked in ¼ cup water 1 tbsp ginger paste 1 tbsp garlic paste 1 tsp cumin powder 1 bay leaf


2 med onions chopped ½ turmeric powder 1 tsp coriander powder ¼ cup of cooking cream ¼ cup of oil


300 gm mixed chopped vegetables 1 small potato chopped


Method


Fry the chopped potato until brown and keep aside. Drain the cashews and grind them to a paste, add ginger and garlic and put aside. Heat a little oil, add the bay leaf and fry the onions on a medium heat until soft. Add turmeric, cumin and coriander powder. Add the chopped vegetables and continue to cook on a low heat for a few minutes until the vegetables soften. Add the cooking cream and potatoes and cook on a medium heat until the sauce thickens.


Add fresh coriander and serve hot with naan.
