healthy fish, give it a try. Roasted, baked or lightly fried, healthy cod recipes are a delicious seafood option for dinner. The following Cod recipe is


very popular at Cabottos. Serves two.


Ingredients: 16 to 20 oz. boneless salt cod 1 Tablespoon butter 1 oz. capers 8-10 kalamata olives 3-4 oz. gorgonzola cheese 1 tablespoon honey Pinch of fresh basil 4-5 oz. marinara or tomato sauce Salt and pepper to taste


Directions: •


In a skillet, heat 3 tablespoons of olive oil on medium heat.


• Cut cod in large or smaller pieces. Dredge in flour. Sauté for about 15 minutes until soft and golden. Keep cod in skillet after cooking, and remove excess olive oil.





In a separate skillet, add 1 tablespoon butter, 1 oz. capers, 8 kalamata olives, and 3 oz. gorgonzola cheese.


• Heat up until the cheese is melted. Add 1 tablespoon of honey, a pinch of fresh basil, 5 oz. marinara or tomato sauce, salt and pepper to taste.


• Simmer about five minutes. • Pour the sauce into the skillet with the cod. This deglazes the skillet and picks up the flavours of the sautéed cod.


• Simmer the cod with the sauce for about 10 minutes. Serve on top of rice, with pasta or potato and vegetables.
