&Dine Joël Robuchon was born in 1945 in Poitiers, France, the son
of a bricklayer. He initially considered joining a religious order, but after discovering his love and talent for gastronomy, he became an apprentice and eventually managed more than 90 chefs at the Concorde Lafayette hotel. When he finally opened his own restaurant, Robuchon was awarded a coveted Michelin three-star rating in only three years, and today he holds the worldwide record of 28 Michelin stars. Designed by Pierre-Yves Rochon as an art deco townhouse,
the Joël Robuchon restaurant at the MGM resort in Las Vegas is the only Robuchon restaurant in the United States, joining those in Paris, Monaco, London, Tokyo, Hong Kong, Taipei, Macao, and Singapore. Offering intimate seating within an elegant purple, beige, and black décor, as well as a vertical wall of live greenery and a garden terrace, Joël Robuchon is also the only Michelin three-star restaurant in Las Vegas. In addition, it received five diamonds from AAA, five stars from Forbes, and the Wine Spectator grand award, while Robuchon himself was named France’s “Chef of the Century” by Gault Millau restaurant guide. Each meal at Joel Robuchon adheres to the strict principles
of the chef’s French culinary mastery. He insists on using only the finest products and ingredients, and selects and trains a team that makes every dining experience flow with ease. Favorites include Le Caviar, a trio dish of thin couscous and Oscetra caviar, smooth cauliflower cream, and a delicate gelée of green asparagus.
