Festive Pork Loin Roast Contributed by Sherri Deaton, CEC’S Holiday Collections Cookbook


INGREDIENTS 4 lbs. center cut boneless pork loin 1 tsp. salt 1 tsp. pepper


SAUSAGE STUFFING 1 lb. pork sausage 3 ribs celery


2 c. crumbled corn bread 1 c. chicken broth


1 lg. onion


1 tsp. poultry seasoning 1 c. chicken broth 1 T lemon juice


DIRECTIONS Cook sausage in large skillet, stirring until it crumbles. Add onion and celery and cook until tender. Remove from heat; stir in bread crumbs, 1 cup chicken broth and poultry seasoning. Cut pork loin in half lengthwise; sprinkle with salt and pepper. Spoon stuffing evenly on bottom half. Place top half over stuffing and tie firmly with kitchen string. Place roast on a rack in a roasting pan. Mix 1 cup chicken broth and lemon juice together and pour over pork roast. Bake, covered with aluminum foil, at 424°F. for 30 minutes. Remove foil and bake 30 minutes more or until meat thermometer registers 160°F. Remove roast, reserving pan dripping to serve with roast. Let stand for 15 minutes before slicing.

1 can eagle Brand milk


1 lb. Hershey’s milk chocolate 1 c. chopped pecans


1 c. shredded wheat cereal 1 c. coconut


Green food coloring


DIRECTIONS Place milk, chocolate, pecans and shredded wheat in top of double boiler. Cook until dissolved and thickened. Form into nests on waxed paper. Let harden. Fill with coconut and colored jelly beans.
