As 2016 draws to a close and with the festive season in our sights, the more exotic varieties of mushrooms, such as oyster mushrooms, shiitake, nameko, beech mushrooms and king oyster mushrooms, start to make an appearance on our menus. The popularity of the many cookery programmes on TV and the rising demand for healthy food has boosted the demand for a year-round supply of exotic mushrooms. This creates opportunities to grow more exotic varieties alongside com- mon white mushrooms. With just some minor adjustments on your farm, the input of knowledgeable third parties and using the existing marketing channels you can make a start and open up a whole new market. The media used for growing exotic varieties are blocks made of sawdust or wood, so a diff erent micro-climate is required. Oyster mushrooms, for example, do not favour high air speeds. This can be solved by using a climate control regulated on under-pressure and ensuring the relative humidity is correct during pinheading. The harvesting method is also diff erent. Oyster mushrooms grown on straw blocks are best harvested as a cluster in the growing room, so the mushrooms can be processed later according to the customer’s specifi cations. On the other hand shiitake mushrooms are picked straight from the block in the growing rooms. The spores released when shiitake are picked can irritate the respiratory system, so wearing a face mask with a fi lter is highly recommended. Don’t be discouraged by the lower productivity of shiitake compared with white mushrooms. Thinning out the mushrooms is very important, particularly at the start of harvesting when the pinheads are two to three centimetres in size. This demands a change in how pickers approach their work, so proper instructions are essential.
