Layla inspires Barming pub’s gluten-free menu

ABARMINGpub has started serv- ing food for the first time – and all of it is 100% gluten free. Now visitors flock to the Duke of Edinburgh in Heath Road from all over Kent – and even down from London.

LandlordAdamPhillips, pictured,

and chef Paul Larcombe came up with the idea of a gluten-free menu as Paul’s three-year-old daughter Layla suffers from coeliac disease. Paul said: “I didn’t know much

about coeliac disease before Layla was born and itwas scary to seehow muchthings like bread and pasta af- fected her.” Paul drew upon his years of expe-

rience in the trade to come up with the new menu, spending three months trying out combinations and perfecting his recipes before launch- ing it on the public in February. He said: “It was very much a process of trial and error. Iwanted to create the same gastropub-style food that regular customers could expect, just without any gluten, rather than creating an ‘ultra- healthy’ option. “We didn’t realise there were so

many people out there who have to follow a gluten-free diet. As every- thing is gluten-free in our kitchen, they can order anything off the menu without any fear of contami- nation, which is a huge comfort, par- ticularly for parents like me with children who have coeliac disease. “Wewant to help as many people

aswe can, so if customers have other allergies, such as dairy, we just ask them to get in touch, ideally with a week’s notice, and we will make sure there is something on themenu

for them.” Much of the menu is tapas-style and sharing platters, but the pub also does a gluten-free Sun- day roast lunch. Adam(45),whotook over the pub

10 years ago, said: “We have been overwhelmed by the response. We have had people comingdownfrom London and all over the county to try our food.” TheDukeof Edinburgh dates back

to 1868. The Shepherd Neame pub underwent a £130,000 refurbishment at the end of last year.
