grees covered lightly with alu- minum foil for two hours. In the last half hour(of the two hours) take the aluminum foil off and let the chicken get nice & crispy(Yumm!) Tis BBQ grill acts as an oven, but alows you to add your own

flavor of hardwoods. Plus, the entire ‘shell’ of the BBQ is thick ceramic. Te Big Green Egg uses an awesome sytem of heat adjusting vents and a ce- ramic plate that goes inside to offset the intense heat normal BBQ’s have. It acts like a big convection oven, but you get that beautiful flavorful wood smoke, which is how the BBQ works. It is not a gas BBQ. My friend Patrick Oster, who owns

Buck Stoves Pools & Spa’s has recently become a Big Green Egg dealer and is clearly a big fan, sold me the ‘ex-

awesome flavor is to grab a variety of herbs from the gar- den and tie them together in a

bunch, and stuff the cavity of the chicken. My favorite herb combo is oregano, thyme, rose- mary, and sage(all fresh). I seal the cavity with the herbs and it comes out magnificent. Accompanying garnishes that taste awesome pasta or

rice and sauteed fresh zuchinni or your choice of vegetable. Most of my meals consist of at least two types of veggies, cooked or un- cooked. A special note:

One of the reasons I called it the ‘Stand UP Chef ’ is because I love to use humor while cook- ing and not take myself to seri- ously. Te only real serious part is knife safety and adhearing to sanitary conditions. Next Month:

The Aprium is a plum and apricot hybrid with mostly apricot heritage. Like

apricots, apriums have slightly fuzzy skin. These fruits were originally invented in the late 20th century by Floyd Zaiger and are now grown in parts of Washington and California. There is only one variety of aprium currently on the market. The Honey Rich interspecific is bright orange and has bright orange flesh.

Mornay sauce is a Béchamel sauce enriched with egg yolks and Gruyère cheese (and/or sometimes
