l Gorwydd Caerphilly is an award-winning traditional caerphilly cheese made in the West Country, and one of only a handful of traditional caerphillies made in the UK today. The cheese is made by brothers Todd and Maugan Trethowan at our dairy on


Puxton Court Farm in North Somerset. Using the unpasteurised milk from the herd of 100 pedigree Holsteins and 25 Jerseys, piped across to the dairy directly from the milking parlour, we turn out around 100 cheeses per day. The recipe was learned by Todd in the 1990s from a


third-generation caerphilly-maker in Mark, Somerset, less than 10 miles away from where the dairy is located today. Prior to the move to Somerset in 2014, we made the cheese on Gorwydd Farm, the family farm in West Wales, for 18 years. We have remained faithful to the original making methods, and all the texturing, stirring and mould-filling is done by hand, as it’s vital to treat the curds gently to achieve the creamy-crumbly texture that Gorwydd is known for. We store our cheese for two months, turning each one on its board every day, after which time the cheese has developed a beautiful, earthy natural rind, with a creamy layer below, and a lighter, slightly crumbly centre with citrusy notes.

The main theme I have noticed is that we have a quality product which you can enjoy every day. The company introduced a good range of cheeses. Cotswold Brie is a delicious white, soft moulded cheese, has a rich yet clean and fresh taste. Cotswold Blue with a Roquefort blue mould which oozes a rich aromatic piquancy. Our Mozzarella was awarded a GOLD 2015 award for its fresh, creamery taste good in summer salads and homemade pizza toppings. All produced using our Organic milk. Our Handmade Single Gloucester has a light, crumbly texture and creamy flavour which has made it a firm favourite with our customers. This cheese is also a GOLD 2015 winner!”
