This property also helps them lower the risk of cancer, sup- port cardiovascular health and help regulate blood sugar. Avo- cados also enhance the absorp- tion of beta carotenes. I eat at least 1/4 of an avocado per day. I serve them for break- fast over a kale bowl or in a fruit salad, for lunch or dinner in salads, guacamole, salsas, blended into raw soups and salad dressings, over chili or beans, over baked potatoes, in sandwiches and more.
#6 - Salmon and oth- er Low Mercury, High Omega-3 Seafood It is difficult to get enough of the critical omega-3 fatty acids
EPA and DHA omega-3 fatty acids if you do not eat fish. Al- though the body can convert ALA omega-3 from nuts and seeds into EPA and DHA, not everyone can do it efficiently or adequately. A recent study showed that although vegetar- ians had a 22% lower risk of colorectal cancer than non- vegetarians, pescavegetarians (vegetarians who also ate fish) were 43% less likely to develop colorectal cancer. Vegans who do not eat fish should consider taking a supplement that ex- tracts these forms of omega-3 from algae. For those of you who eat seafood, you should se- lect those that have the highest amount of DHA and EPA ome- ga-3 and the lowest amount of mercury. Anchovies, herring, Pacific oysters, and salmon are low in mercury and contain the highest concentration of DHA and EPA omega-3. Consider eating 2 to 3 servings per week.

#7 - Broccoli and other Cruciferous Vegetables I have met many children who will not look at a vegetable but for some reason they love broc- coli. One child told me that it was because they look like little trees. Broccoli’s most impor- tant characteristic is its ability to help prevent cancer. It does so because of three characteris- tics. It’s a powerful antioxidant. It has anti-inflammatory prop- erties and the ability to pro- mote and regulate detoxifica- tion at the cellular level. Most research has shown a link be- tween broccoli and decreased risk of prostate, breast, colon, bladder and ovarian cancer but it may very well lower the risk of many other types of cancer also. A half-cup serving a day or a two-cup serving twice a week would provide these ben- efits.

The chord struck as I men- tioned earlier, even more so was the quietness of the bike. And to top it off, the quiet- ness of the forest. My wife and I stopped to catch a breath from the first 6
miles...and it was beautifully silent. No cars, horns, sirens or ambient city noises. It was breathtak- ing, literally & figuratively. Talk about Upbeat
Times...this was it. The crescendo of the silence was accented by a lone bee off in the distance, that we could both hear quite well be- cause where we were standing with our bikes taking a sip of
