this is the classic chilled soup from spain – full of flavour and really refreshing; in fact a great lunch replacement at the peak of the sun’s heat. If you’ve been in inland southern spain in July and August, you’ll know they know a thing or two about keeping cool... If you have some very ripe melon, add a wedge of that for a fruity note or a dash of fino sherry makes a lovely pre- dinner drink.
• 4 very ripe tomatoes, roughly chopped • 1 clove garlic, peeled • 10cm piece cucumber, peeled, deseeded and chopped
• 3tbsp olive oil • 1tbsp red wine vinegar • Salt and pepper
Whizz everything up in a food processor or liquidiser with 50ml cold water until smooth and chill in the fridge until really cold. Serve in individual glasses as a starter to a meal or just as a drink.
