~HEALTH BEGINS IN THE KITCHEN~ Asian Cole Slaw with Ginger-Tahini Vinaigrette

free, low-sodium soy sauce
3 tablespoons rice vin- egar or raw, unfiltered apple cider vinegar 1 tablespoon cold- pressed hemp oil or extra virgin olive oil Pinch cayenne
For the cole slaw: 1 organic Napa or other green cabbage, chopped (about 8 cups)
2 scallions, thinly sliced white and light-green parts
1 large carrot, peeled and shredded
¼ cup seedless raisins ¼ cup sliced raw al- monds
Directions:

and K and is also a very good source of folate and vitamin A.
Ingredients For the ginger-tahini vinaigrette:
1 clove garlic, grated 2 teaspoons freshly grated ginger
2 tablespoons raw tahini 2 tablespoons raw agave nectar or honey 2 tablespoons gluten-
Make the vinaigrette: Blend the garlic, ginger, tahini, and honey or aga- ve nectar in a small bowl to form a thick paste. Slowly stir in the soy sauce, vinegar, oil, and cayenne until well blend- ed. Set aside.
Make the salad: Place all
the ingredients in a
large bowl with dressing and mix thoroughly until dressing is evenly dis- tributed and cabbage is
well coated. Serve imme- diately or refrigerate until needed.
Eight (1-Cup) Servings Yield
Per serving: 110 calories, 5 g total fat, 0.5 g saturated fat, 297 mg omega-3 and 2,141 mg omega-6 fatty ac- ids, 0 mg cholesterol, 3 g protein, 15 g carbohydrates, 3 g dietary fiber, and 200 mg
