“Stay calm, it’s only food!”


2. What’s the best cooking tip you’ve ever received?


“Cook with passion and understanding of your ingredients.”


3. What six basics should we always have in the kitchen cupboard?


“Olive oil, pasta, anchovies and risotto rice.”


4. What basics should we always have in the fridge? “Peroni beer!”

5. What’s you favourite nosh? “When I go home at night, and forgotten to have dinner in the restaurant, I have baked beans on toast.”


6. What are your favourite kitchen gadgets? “My knives and my Mafter thermometer.”


7. What’s your favourite fail-safe dish? “Risotto with white truffles.”


8. What would be your ideal menu for a casual dinner with friends? “Sea bass in sea crust, vegetables, salad and bread.”


9. What would be your ideal menu for a romantic dinner pour deux? “When I’m in romantic mood, I don’t concentrate that much on food!”


10. What’s the biggest no-no when cooking? “Dirty fingernails!”
