A taste of sunny South Tyrol in every bite

he cooperative society Milchhof Brixen – Brimi Gen.m.b.H. – processes more than 89 million kilogrammes of


South Tyrolean mountain farmer milk every year. About 1100 farmers in that region commit their precious raw milk to the almost 150 employees of the plant in Vahrn who process the milk and produce various kinds of cheese, butter and cream. For this dairy company the mozzarella production has the highest priority. OCS Checkweighers support the cooperative society, which is among the leading producers of cream cheese in Italy, by providing highly precise checkweighers equipped with cutting- edge Weigh Cells suitable for the specifi c requirements of the food industry.


The roots of Brimi go back to the year 1927. However, it was not before 1969 that the two alpine dairies Brixen and Natz-Schabs merged and formed the new dairy company Brixen. Eight years later the new site in Vahrn (see picture on the right) was taken into operation and soon after the production of mozzarella developed into the most promising branch. Over the years it has grown constantly and today it contributes about 75 per cent to Brimi’s turnover.


Checkweighers, especially those applied in hygiene areas of the food industry, have to endure frequent and intense cleaning cycles with high pressure cleaners and aggressive cleaning agents. With its open base frame, rounded surfaces and without any hidden


hollow spaces in the whole system the checkweigher HC-WD made by OCS with its well thought out details demonstrates impressively how extremely precise weighing technology can successfully withstand frequent cleaning intervals. Furthermore, the heart of the checkweigher consists of an entirely sealed Weigh Cell type EC-ES-FS which is a crucial prerequisite for the checkweigher to


comply with protection class IP 69K. For many years checkweighers for so-called wash-down applications provided by OCS have been used in Brimi’s South Tyrolean production hall where the famous mozzarella is processed.


In case of rejections the product drops down immediately


Willi Tauber, managing director of Brimi (see picture on the right), appreciates the quality of OCS’s checkweighers in general and the weighing technology specialist’s ability to provide individual solutions tailored to the needs of the customer in particular. The reason: Brimi is one of the few customers of OCS who possess a checkweigher equipped with a special, custom-made rejection system. Due to the conditions in the production line in Vahrn the management had to give a space-saving design a high priority. Usually OCS checkweighers are equipped with a rejection system that expels faulty products sidewards into a rejection bin. However, the space-saving version, which has created a lot of satisfi ed faces among Brimi’s management, channels faulty products to the bottom by means of a retracting conveyor that is similar to a trap door. First a conveyor guides the packaged mozzarella through a metal detector from where it is immediately taken to the checkweigher where the correct weight is verifi ed.


In case the package passes both tests without any objections it remains in the production line. Otherwise, if either the metal detector or the checkweigher detect a fault, an impulse is sent to the retracting conveyor which immediately drops the


aff ected unit into the rejection bin (see picture on the left).


An additional sorting system is now responsible for the correct processing of the rejected product. Depending on whether the metal detector or


the checkweigher triggered the rejection the channel to the correct rejection bin (“metal” or “incorrect weight”) is opened. The other channel is simultaneously closed in the same step to prevent faulty products from being dropped into an incorrect bin.


At Brimi Richard Tauber (see picture on the left) is responsible for technology and maintenance. According to him the weighing technology by OCS has an outstanding performance. Willi Tauber remarks and emphasizes his praise for OCS Checkweighers, especially regarding the technological fl exibility.
