Luckily, the pomegranate is a part of the many fruits grow- ing on my property. Most of the fabulous juice has been turned into Pomegranate Jelly. It has a unique, delicious taste with an intense scarlet color. This recipe has been turned into gifts, numerous times, to family, friends and neighbors, including Linda Walker, who helped inspire this article.
SUZY’S
POMEGRANATE JELLY
3 ½ cups juice from 5-6 pomegranates
1 box Sure-Jell fruit pectin 5 cups sugar
Squeeze juice (an Italian fruit juicer with cone shape, works best). Or buy already squeezed juice. Must allow it to rest in refrigerator until sediment settles. (Overnight) Pour off clear juice. Discard sediment. Put juice into a 6-8 qt. sauce pan. Add pectin and place over high heat, until mixture comes to a boil. Immediately add all sugar, stir while bring- ing back to a rolling boil. Let boil for one minute. Remove from heat and skim of foam. Ladle quickly into hot steril- ized jars-filling them to 1/8 inch from top. Wipe jar rims and threads. Cover with lids and screw down tightly. Invert jars for five minutes, then, turn upright. Check seals after one hour. OR, process in boiling water bath for 5 min. Make’s 6– 8 oz jars.
