I always have Four Tortillas on hand because you can do so much with them.
Vegetarian Enchiladas *
Heat 1 tbsp oil in frying pan Add onions & 1/2 the green pepper 1 small cooking onion, chopped 1 green pepper, chopped Pepper and sauté until soft
Add:
1 can black beans, drained & rinsed 1 cup grated Monterey jack (Jalapeno-type best) or cheddar cheese 1 Tbsp. chilli powder Salt & Pepper 8 Large Flour Tortillas Spoon mixture into middle of Totillas, fold over, tuck in, fold in sides and fold again.
Place in baking dish or fry pan Pour over:
1 can tomato sauce or canned diced tomatoes mixed with 1 cup salsa sauce
Top with: 1/2 cup grated cheese and remaining chopped green pepper. Cover, and bake at 375° for 20 minutes. Using the stove-top method will require a low heat, covered, for about 30 minutes. Serve with sour cream.

* Meat lovers can brown up some ground beef or chicken to add to fi lling.
Any kind of beans will do and you can throw in some celery or whatever else needs using up like leftover corn niblets, for example. If you have leftover chilli con carne, it can be used as fi lling with cheese added. Be creative!
Pizza
Use 2 or 3 tortillas with some grated mozzarella between the layers to hold them together. Spread with tomato paste. Add grated mozzarella cheese, toppings of your choice, then Parmesan cheese and herbs.
Pizza can be made in a non-stick fry pan using low heat, covered at fi rst then uncovered to crisp it up (requires some watching as I fi nd the gas elements in RV’s are diffi cult to keep at low heat sometimes) for about 15 minutes.
Originally, pizzas in Italy were cooked this way. Or, you’ll need a 450° oven for 10 minutes.
Remaining Tortillas get used for lunchtime wraps or for a happy hour contribution, spread with fl avoured cream cheese*, roll up and slice into pinwheels.
For breakfast, wrap around scrambled eggs cooked with green onions and sweet peppers.
* In my pantry I always have dried vegetable fl akes to use in making soup. (Dan Dee pack in Thrifty’s bulk food dept.) You can make fl avoured cream cheese by adding the fl akes, some veggie broth powder and dried dill.
This also makes a good dip using sour crème. Give the fl akes time to soften before serving.
