Union Pacific’s dining car manual of recipes and service instruc- tions from the 1950s and ’60s. Titled Dining on the UP, it was produced with the help of the Union Pa- cific Historical Society,

Bailey Family (one of whom, Edd, rose from being a car man’s helper to become the UP’s President), and a half dozen other individuals. The book offers sev- eral hundred recipes divided into sixteen categories, from “Fruit, Juices, Cereal” to “Cold Meats,

Meals.” There are appetizers, soups, six sec- tions of meat-specific entrees, plus salads, vegetables, desserts, breads of all kinds, and beverages. From the simple — Tomato Corn Chowder — to the hearty — Baked Stuffed Spare Ribs with Sweet Potatoes and Sauer- kraut — to the sublime — Orange Chiffon Pie, the recipes illustrate the art of dining car cuisine: Minimum ingredients and few preparation steps, but delicious results. A Call to Railroad Artists: The Steam into History project (www.steamintohistory .com) being launched in New Freedom, Pennsylvania, is devoted to re-creating Civil War-era railroading. This includes building a new Civil War-era 4-4-0 and two replica passenger cars, and is scheduled to begin op- erations this summer. The group’s manage- ment is seeking art that depicts the roles railroads played in the Civil War for a possi- ble exhibit and/or to offer for sale through it’s gift shop.
