Why Age a Steak? Proper aging of fresh beef enhances the tenderness and flavor. Most local meat markets and grocery stores don't age beef as it requires extra space and because of the yield loss. Here at Burgers' we feel this extra step is well worth the extra trouble.
How Long is Beef Aged? Between 14 and 28 days. Filet requires less
aging, 14 days, compared to a Strip Steak, 28 days.
