Turkish delights and a wall of wine

W
hen someone crushes a pistachio or purees a to- mato in Turkey, the ac-
tion is referred to as “ezme.” A quick study of the menu of the restaurant and wine bar that re- placed the original Pesce this spring makes clear why brothers Yavuz and Harun Bolukbasi christened their latest effort Ezme: Among the dozens of small plates on their Turkish script in Dupont Circle are plen- ty of ingredients that have been mashed (chickpeas for hummus), chopped (grilled eggplant for a salad) or reduced to a pulp (to- mato relish with chicken kebab). Yavuz manages, Harun cooks.
The siblings are not new to the scene; their other interests are Meze, a nine-year-old Turkish restaurant in Adams Morgan serving similar dishes, and the French-inspired Bistro Cacao on Capitol Hill. The brothers also have some nearby competition in the form of the just-launched Agora (formerly Jack’s) on 17th Street NW. Turkish food: Do we smell a trend in the making, something to take our minds off cupcakes, burgers and Twitter blasts from roving food trucks? At Ezme, the genial service and the muham- mara, a zesty paste of roasted red peppers and walnuts, suggest that more Turkish food would be a good thing. Small plates in- clude classics such as doner

kebab and manti, and are found under headings such as “Gar- den,” “Land” and “Air.” Ground chicken meatballs fall in that last category, prompting a pal to crack, “When’s the last time you saw a chicken fly?” The dish is plenty satisfying, as is the pil- lowy bread with which we eat it. The dining room is small, with about 50 seats. The setting is moodier than that of Pesce, which migrated a few storefronts away. Wine is displayed every-
where, and there is an illuminat- ed onyx bar in the rear. Yavuz fig- ures he has 36 cases of wine stored in reclaimed wood sup- ports on the walls. All those bot- tles look swell, but isn’t he wor- ried about exposing them to ex- cessive light and heat? “At the end of summer,” he says, “I can give you a better answer.”

2010 James Beard Award winners announced
Washington chefs were shut out for the second year in a row at the 2010 James Beard Foundation Awards in New York on Monday night, falling in three national categories and in the mid-Atlantic competition to chefs from other cities. José Andrés of Minibar lost to
Tom Colicchio of Craft in New York for the national Outstanding Chef award. Johnny Monis of Komi, nom-

Since its debut in this How- ard County community last fall, Sidamo Coffee and Tea — like its older, better-known sibling in the District — has been busy satisfying beyond-the-Beltway tastes with winsome and wholesome light fare. One of the many crowd- pleasers is the chicken salad sandwich: a mixture of roast chicken, red onion, pepper, gar- lic, mayonnaise and hot mus- tard on toasted multigrain bread ($6.95). “I chop and chop” throughout the day, says co-owner Mimi Desta, who warmly greets visitors by plac- ing her two hands over one of theirs. The shop, nestled in the nas-
cent Maple Lawn development, is decorated with prints de- picting Ethiopia’s ancient agrarian lifestyle. With 10 wooden tables, each graced with a single fresh flower, the environment is custom-built for contemplative conversa- tion.
At lunch, the vegan and the
veggie sandwiches have emerged as the shop’s most popular selections ($6.95). The vegan, featuring house-made hummus infused with garlic, olive oil and lemon, is available as a panino, in a wrap or on toasted multigrain bread. The flavors are so satisfying, even devout meat-eaters might find themselves crossing the line
more often for a fix. The veggie sandwich comes with Desta’s own pesto sauce, Swiss cheese and lentils, her go- to legume. “I boil the lentils for half an hour, and then I mari- nate them for two days,” she says. Desta crowns them with red onions, green bell peppers and garlic. She says the sight of lentils peeking out from under toasted bread “surprises” first- timers: “They expect mush- rooms. But if I don’t like it my- self, I’m not going to sell it.” The vegan and the veggie
creations, both plump and pleasing, are accompanied by sides such as Desta’s pasta sal- ad. The al dente penne is com- bined with generous helpings of cream cheese, onion, garlic and pesto, plus different daily additions such as broccoli, cu- cumbers and carrots. Linger over a coffee while your order is being shaped in the back. You’ll find that the food to take away tastes as if it came directly from Desta’s kitchen at home. This is food both simple and good. For Des- ta, it remains very personal.
