MEMBERS ADVICE
DISPOSABLE GLOVES HYGENIC? ON THE RADAR
RICHARD STEVENSON, TECHNICAL MANAGER Delivering advice to Members
Personally, I do not
recommend the use of latex gloves although I have come across businesses that swear by them and defend their use passionately. I also oſten hear the argument that there are many countries in the World and quite a few US states where they have made it compulsory for food handlers to wear gloves.
Tere is rightly always a big
focus on hand hygiene in food businesses and, in my opinion, it is THE most important and basic thing to get right.
Te Food Standards Agency
would be well advised to make hand cleanliness at the centre of food hygiene advice rather than getting bogged down, as they oſten do, over the dual use of equipment, separate staff and separate protective clothing etc. Probably the best thing is
for you to make up your own mind on what best suits the style of your business and staff circumstances and then set this as a standard procedure.
I have come up with the
following list of pros and cons to help you decide.
IN FAVOUR: • When new from the box, the numbers of bacteria present would be zero or insignificant. • Tey would have no “Residential” populations of bacteria in the way that hands always do. • Te smoother texture of gloves (over hands) means fewer bacteria on the surface and also makes them easier to clean. • May save management time in having to monitor frequency and effectiveness of staff hand washing. • Food handlers are less likely to touch their face, mouth and hair. • Tey are also less likely to touch other surfaces or potential sources of contamination. • Use of gloves is usually popular with customers and is a very visible demonstration that you take hygiene matters seriously.
AGAINST: • Hands still need to be washed BEFORE handling the gloves prior to putting them on. Tis is a vital point that is oſten missed. • Gloves tend to breed complacency amongst staff and they could neglect other hygiene measures. • Latex gloves are not perfect and not usually guaranteed to be sterile. It has been reported recently that 4% had defects, 34% allowed the penetration of bacteria and 53% failed in use. • Gloves are just as capable of spreading cross contamination • Food handlers wash hands less oſten. • Staff will continue to wear them even when dirty or damaged. • Staff may be allergic to latex rubber.
