does not negate the desire for exciting biscuit flavours. Indeed, according to Hélène, they can complement each other. “Biscuit brands that leverage ingredients like Sicilian lemon can entice consumers as a way to travel through their tastebuds to different regions. Moreover, innovative flavours that are derived from natural sources deliver on both clean label and novel characteristics. Each ingredient in our flavour library is derived from a natural source, enabling biscuit brands to bring inventive flavours and combinations to the forefront while also meeting their clean label targets.” On top of that, Hélène says that consumers are increasingly looking for reduced sugar content on the ingredient labels of

baked goods. The challenge here is that reducing sugar can create biscuits that lack flavour, sweetness and mouthfeel, due to sugar providing key functionality. “We have to tap into our portfolio of low- and no-calorie sweeteners to help reduce sugar, while also replacing sweetness, rebalancing flavour and rebuilding functionality. Many of our sweetening solutions are plant-based, complementing our flavour offerings to deliver delicious sensory experiences with consumer-preferred product labels,” concludes Hélène.


A focus on functionality


My next stop was a conversation with David Edwards, Applications Manager at JPL Flavour Technologies, who pointed out that the functionality of flavours is a common theme amongst his bakery customers. “Providing solutions to issues created with the impending HFSS legislation (now delayed for another year in the UK) led to JPL Flavour Technologies developing a salt modulation technology that can be applied to most of its flavour offerings to boost the perception of saltiness in baked goods, as the levels of salt are lowered. “The same goes for sugar reduction in bakery products
