Awakened Grains unveils patented whole-grain processing technology
Seattle-based Awakened Grains has introduced a patented process designed to improve the nutritional profile, flavour and performance of whole grains for bakery and food applications. The controlled germination and
starch-conversion process produces flour with up to 30% more protein, 40 times more fibre, 75% fewer net carbs and 30% fewer calories, according to company research. It can also reduce the amount of added sugar required while maintaining sweetness. “Our patented process improves
grains and legumes by removing natural digestive blockers, making more nutrients
metabolically available and creating products that are both comfortable to digest and enjoyable to eat,” said David Naccarato, COO, Inventor and Founding Partner. The technology is designed for
applications including bread, pastries, snacks, breakfast cereals, pancake mixes, pizza crusts and pasta, with the company’s patent covering cereal and non-cereal grains, ancient grains, legumes, pulses and seeds. Imperial Flour is now available for
licensing, while Awakened Grains plans to introduce Power Flour, targeting 3.5 times the protein, 40 times the fibre and 80% less starch than standard bread flour.

Tesco NI expands local bakery range with 22 new products
Tesco Northern Ireland is expanding its locally sourced bakery offering with 22 new products from regional suppliers, taking the retailer’s local bakery range to 58%. The latest launches span breads, cakes, traybakes, pancakes, rolls and sweet treats, with 86% of Tesco NI’s bread lines now supplied by bakeries in the province. The new products come from Irwin’s Bakery, Ashers Baking Company,
Bertie’s Bakery, Holmes Bakery and new supplier Rosie’s Bakes. The additions build on 118 local bakery products introduced by Tesco NI over the past three years. Irwin’s Bakery, which has supplied Tesco since its first Northern Irish
store opened in 1996, is marking 30 years of partnership with new Fibre+ White and Wholemeal loaves, alongside Howell’s Lemon Joeys. Ashers is expanding its range with Canadian Sourdough Bread, Cinnamon Swirls, Chocolate Sponge Slices and Chocolate Fudge Cake, while Bertie’s Bakery is launching Lemon Layer Cake, Crème Layer Cake, Square Crèmes, pancakes and Lunch Box Sliders. Holmes Bakery is adding new traybakes including Triple Choc Brownie and Bakewell Flapjack. New supplier Rosie’s Bakes is introducing its NutriLean Energy
Pancakes in three flavours. Ben McFadden, Bakery Buying Manager at Tesco Northern Ireland, said: “Our customers are always keen to find much-loved locally sourced products in store. Our new summer bakery range will give customers even more great tasting, quality products from NI bakers.” Bertie’s Bakery founder Brian McErlain said Tesco’s support had helped the business “increase production, create new jobs and reach new customers across the region.”
