Alternative Sweeteners and Sugar Reduction


EverSweet® is emerging as a front- runner in the zero-calorie sweetener market. This collaboration aligns with our broader mission to lead in sugar reduction solutions by providing products that strive to meet both health-conscious and environmentally conscious consumer needs.


With EverSweet® already available in the UK, what strategies is Cargill employing to scale its adoption across other regions? First commercialised in the U.S. in 2019, EverSweet® is already available also in Canada, Mexico, and other major markets and used to formulate a broad range of food and beverages. Following positive safety reviews from the European Food Safety Authority (EFSA) and the UK Food Standards Agency (FSA), EverSweet® is poised for broader European rollout in early 2025. This regulatory approval opens doors for adoption in key markets. To drive regional growth, Cargill is focusing on collaborating with local food and beverage manufacturers to help reformulate products with reduced sugar content while maintaining consumer appeal.


How is Cargill responding to the growing consumer demand for label-friendly, natural- origin sweeteners? We have a broad portfolio of sweetener solutions to meet various customer and consumer needs. This includes a long expertise with stevia, with our innovation journey dating back to 2011.  sweeter, Truvia®, a few years after beginning the development work. While Truvia® is based on Reb A, the most plentiful sweet component found in stevia, our researchers found that the leaf contains dozens of sweet compounds, and they taste very different by themselves and when used in combinations. Hence, we developed a proprietary taste prediction model, enabling us to precisely predict which combination of sweet compounds is expected to deliver optimal taste and sweetness in a given application. We used that insight to create our portfolio of ViaTech® stevia sweeteners. EverSweet® is the latest development in this innovation journey and like the rest of the stevia portfolio, it aligns well with label-friendly ingredient trends.

What challenges did Cargill face in developing a fermentation-based process for steviol glycosides Reb M and Reb D, and how were these overcome? Developing a fermentation-based process for Reb M and Reb D posed several challenges. Key among them was optimizing the yeast strains to      glycosides. Additionally, scaling the process to meet commercial demand while maintaining      and expertise.  Cargill leveraged cutting-edge biotechnology to        in Blair, Nebraska, enabling the production of EverSweet® at scale.
