our fruit vegetables and plants are fully traceable, non-GMO and we have full organic range as well. We’ve seen the rising interest in colouring foods in the recent months because of the pandemic, consumers are paying more attention to what they eat, so clean ingredients are very much in demand as consumers want to know where their food is coming from and our colours can be listed on the labels as clean and clear labels.
AP: How does 2021 compare to 2020?
LJ: In 2020, the main colour trend by GNT was shades of aqua. The reason for that was because of all the chaos going on in the world because of the COVID-19 pandemic. People were trying to connect with nature and the greens and blues are really the nature of colours.
Andrea Pluck: What does GNT predict will be the key trend for 2021?
Lorraine Jansen: For 2021 we are forecasting that red will be the dominant colour trend – it’s an iconic shade in the world of fashion, beauty, film and design for past years and we believe that it’s now ready to make a major impact on food and drink as well. It’s a colour of contradiction, on one hand, red is associated with love, desire and affection and with the pandemic, it’s helping to inspire feelings of unity and we expect demand for red to soar in 2021.
AP: How will the colour red impact the confectionery industry?
LJ: It’s an ideal shade because it not only creates ‘Instagrammable’ appeal, but it’s been shown to enhance perception of sweetness, especially in confectionery. It can be used to bring a wide range of
confectionery products to life and red is highly effective for seasonal events such as Valentine’s Day and Christmas Day. It can also be used to showcase adventurous flavours like hot chilli – as a result of the pandemic, we see consumers are looking for adventure within products; they are looking for new flavours.
AP: What other trends does GNT Group predict?
LJ: We are seeing that vegan and plant-based trends are bigger than ever. In confectionery, colouring foods is a perfect solution for that because they are made from only fruit, vegetables and plants, with no chemical solvents. This means that manufacturers can replace colourants such as carmine with clean label, plant-based solutions. Another trend for 2021 is transparency
– consumers want to know exactly where their ingredients are coming from and
