Method 1. In a small bowl, gently warm the peanut


butter until melted. 2. Add the chilli sauce, lime juice, sesame oil


and soy sauce. Stir well. 3. Slice or roughly shred the duck or


poussin. 4. Toss together the spring onions, carrots,


cucumber and lettuce. Top with the shredded duck. Pour over the chilli, lime and peanut sauce. Scatter the sesame seeds and serve. For individual bite size morsels: Use little


gem lettuce leaves as a small cup. Nestle inside each leaf, shredded spring onion, carrot and cucumber. Top with a slice of duck and a small amount


of the sauce with a final garnish of sesame seeds.

Andes is always present among the sea of vines. The Andes is crucial to the success of these central regions, provid­ ing pure melt water to irrigate the vines, planted in what was near dessert condi­ tions. In higher altitude this is not necessary

and this is where the white wine grapes are grown. Red wine grapes need more sun­ shine and a little longer to ripen, hence they are grown in the warmer areas. TORRONTES is an aromatic white wine


peculiar to Argentina. OLA TORRONTES, widely available around £4.30 is a good example of this fresh, new wave style of wines. Pale in colour it has hints of pink grape­


fruit and rose petals, not as perfumed as Gewurztraminer, but still an ideal accom­ paniment to Indian or Thai cuisine. Another unique grape variety is BONA-


DA. Originally from Italy it is making great fruity wines in Argentina. ALAMOS BONADA 2002 from D. Byrne at £5.29, tastes like a wine at double the price. It is deep crimson in colour, brimming with all those red fruits, especially redcurrants, has little tannins making it great to drink on its own. For an experiment I chilled this for a couple of hours in the fridge, which increased the overall effect making this much more fruity. A chilled red wine, now all we need is more sunshine.
