History of Christmas pudding - and how it started as porridge
THIS year more than 40m. people will finish their festive meal with Christmas pudding, yet few know of its origins or the customs and super stitions associated with it. According to research carried out
by Matthew Walker, Britain's largest producers of Christmas puddings, today's tasty dessert began as some thing completely different. It originated as a 14th Century
"porridge" called frumenty, which was made by boiling beef and mutton with raisins, currants, prunes, wines and spices. This would often be more like a soup and was eaten as a fasting dish in preparation for the Christmas festivities. By 1595 frumenty was evolving
into plum pudding, having been thickened with eggs, breadcrumbs, dried fruit and given more flavour thanks to the addition of ale and spirits. Just as it became the custom ary Christmas dessert, along came the Puritans in 1664, who banned it as a lewd custom describing its rich ingredients as unfit for God-fearing people.
