CHOCOLATE MUFFINS Ingredients


Q l l/2oz. cocoa (unsweetened


chocolate) powder 9 4oz. caster sugar (superfine)


9 10ml baking powder 9 1/2 tsp salt 9 1 large egg


. 9 8fl oz. milk 9 1/2 tsp vanilla essence (extract)


. 9 4fl oz. sunflower or vegetable oil Method


1. Mix together the dry ingredients


and make a well in the centre. 2. Thoroughly mix together the


egg, milk, vanilla essence and oil. 3. Quickly stir the liquid into the


dry ingredients just until they are all incorporated. Do not overmix; the | mixture should be lumpy. 4. Spoon into muffin cases (papers)


or tins and bake in a preheated oven at 200C gas mark 6 for about 20 min­ utes until well risen and springy to
