ON cold winter evenings it is lovely to sit and watch televi­ sion, particularly when it is showing warm, sunny, foreign places.

gramme he paid a visit to his favourite country to taste and cook the local delicacies: He was in Goa, the land of plenty,


when it comes to fish, seafood and vegetables. I visited Goa a few years ago and


there is an abundance of fish in the local markets of every shape and size, mostly still alive, on the small slabs laid out on the side of the dusty roads. Rick Stein's programme brought back lovely memories of the wonderful seafood we ate in the restaurants and in the wooden and straw shacks dotted all along the miles of golden sand. So, to make you feel warm and


sunny inside, why not try this Goan Prawn Balchao?


GOAN PRAWN BALCHAO Ingredients


(serves four)


A 6 tbsp vegetable oil O 2 medium onions, finely


chopped O 6 garlic cloves, finely chopped


O 2 tbsp red wine vinegar O 1 tbsp muscovado sugar O lib. cooked peeled prawns @ 2 young fresh bay leaves, very


finely shredded GOAN MASALA PASTE


9 1 tsp cumin seeds © 2 tsp coriander seeds 9 2 tsp black peppercorns 9 2 tsp cloves 9 1 tsp turmeric powder 9 4oz. red finger chillies, roughly


chopped 9 1 tsp salt 9 6 cloves garlic, peeled ®1 tsp muscovado sugar 9 2 tbsp prepared fresh tamarind


(the juice of lime or lemon can be used as an alternative)


9 2in piece of fresh root ginger,


roughly chopped 9 2 tbsp red wine vinegar


grind the cumin seeds, coriander seeds, peppercorns and cloves in a coffee grinder or pestle and mortar. Transfer to a food processor with all | the remaining paste ingredients and process until smooth. Spoon into a sterilised glass jar, seal and store in
