SON-IN-LAW EGGS with Rebecca Smith. 1
THIS week's recipe has come via ELN sub-editor Rebecca Smith who was searching for a recipe for an international night of cuisine she is to attend this week end. Having just returned from a
trip to Australia, this caught her eye. With a brood of laying hens at home in Cliviger, Rebecca is always on the look out for new ideas with which to
use the resulting eggs. The recipe comes from Thailand,
but there seems to be some doubt as to the reason for its name. Maybe it is what many mothers would like to do to their sons-in- law! In Thailand the dish is famous
for its name, as well as a classic recipe. I t could be served as a
snack, starter, or in a salad and is sufficient for four people.
Ingredients
3 tbsp vegetable oil. 4 shallots or 1 small onion, finely
chopped. 4 hard-boiled eggs, shelled and , „ ,
halved. 2 tbsp fish sauce.*

Heat the oil in a frying pan or wok and fry the shallots or onion for
about five minutes, until brown. Lift out with a slotted spoon and
put to one side. Add the eggs to the pan and fry
them until they look crisp and "blis
1 tbsp cold water. 1 tbsp soft brown sugar, fresh coriander leaves or parsley, to

set aside. Add the fish sauce - either bought
or make your own - water and sugar to the pan and stir well to dissolve
the sugar. Reduce the heat and simmer for
five minutes, until the sauce is thick,
brown and blended. Return the eggs to the pan and
reheat for two minutes, stirring care fully.
Serve immediately with the fried
shallots or onion, garnished with sprigs of coriander or parsley. *Fish sauce is a light, clear liquid
with a similar consistency to soy sauce. Its salty distinctive flavour is a fundamental flavouring in Thai and Vietnamese cooking - on a par
with salt in the West. It is available, bottled, from Orien tal stores and some supermarkets.

THERE is very little difference in duty, production and distrib ution costs between wines cost ing £3.49 and £5.99, except that more of your money goes into the quality of the grapes used and hence the better the
wine the more you spend. Nowhere is this more evident
than in the sunshine wines of South Africa, good value at the bottom end, but worth spending just a lit
tle more on for quality. The Robertson Winery Wide
River Pinotage 1998, from Booths, Clitheroe, at £5.29, is a perfect exam ple. You can find cheaper versions of this grape variety and more expen sive. At the lower end of the price range you find sweetish "acetone flavours, almost medicinal and, at the other end, there are harsh tannins

which will soften out with time, but you want to drink your wine now! This wine fits the criteria, as it is
delightful to drink now. The Pinotage grape variety is
unique to South Africa, being a cross between the Pinot Noir and the Cin- sault grapes (Cinsault used to be called Hermitage in South Africa, hence the name) and developed local ly for the conditions. Handled care fully, as here, with the emphasis on quality, not quantity, this co-opera tive-produced wine is full of soft bramble and blackberry jam, both on
the nose and palate, backed with a
hint of spices. The colour in wines is derived from
the length of time the skins are in contact with the juice (or must), and is called the extract. The rich plum my colour shows an intensity of the extract. All this is achieved without too much tannin, giving a soft, fleshy easy drinking wine, with a light to middle weight and is a good all-round wine with or without food.

against a very real dream. I t is art house stuff, brought to the multi plexes by the Hollywood glamour of its lead actors, Tom Cruise and Nicole Kidman. Just as in real life, they play hus
band and wife - Cruise is Dr Bill Harford and Kidman is his partner
Alice - a dream couple, whose seemingly perfect life together is almost destroyed by fantasy and
charade. I t is not high-octane action
material, but more an exploration of vulnerability and self-discovery and, as such, it is not a few lagers,
seat-gripping watch. Nor is the much-feted orgy scene
the promised piece of erotica and raunch. Instead, it is cliched and almost comic, but then perhaps that is what Kubrick intended - a stereotype fantasy made unsexy by
being made real. Kubrick has made a genre of
splitting opinions on his films and Eyes Wide Shut is no exception. The performances are powerful, yet the approach to enjoying this film
