SALMON MUFFINS WITH DILL SAUCE with Weightwatchers


WHILE at the gym this week, a fel­ low keep-fitter asked me to find a recipe she could make and eat lots of without putting on any weight. In an attempt to help her, the


"Dish of the Week" recipe this week has come from the Weight Watchers


cook book. It has three-and-a-half points per


muffin, with a total of 28 points - this will mean a lot to you if you attend Weight Watchers. Dieting is essential if you want to


lose weight, but physical activity can certainly promote well-being


and help tone-up flab. If you are good at swimming or


racquet sports, for example, try to get back into those activities, or take up aerobics, jogging or gentle forms of exorcise like yoga or t’ai chi. Try exercising with a friend or partner, someone who will encour­


age, not discourage, you. Also make sure you eat three meals a day, especially breakfast,


and snack on fruit. Snacks are a big no-no on many


diets which try to curb people's eat­ ing patterns to consume less calories. Yet one of the most effective ways to stabilise blood sugar and control

Ridiculous? Absolutely.

It is parody within a parody, if you want to get intellectual about it, but with this sort of dumbed-down dross, believe

(makes eight muffins) In g re d ie n ts O low fat cookery spray O 5oz self-raising flour ® 1 tsp bicarbonate of soda O 418g can pink salmon, drained


and flaked, skin and bones removed ® 4fl oz low-fat natural yogurt


® 1 egg, beaten • 1/2 tbsp olive oil


9 1 tbsp red Thai curry paste or 1


tsp chilli powder ® paprika, to decorate


® green salad leaves, to serve


Dill sauce ® 1/2 cucumber, grated ® 1/2 pint low-fat natural yogurt


9 2oz low-fat soft cheese 9 1 tsp lemon juice G 2 tsp dill weed


Method 1. Preheat the oven to gas mark


7/220C or 425F. Lightly oil eight muffin or patty


tins with low-fat cooking spray. 2. Sift the flour and bicarbonate of


soda into a large mixing bowl. Stir in the flaked salmon. 3. Make a well in the centre and


pour in the yogurt, egg, oil and Thai paste or chilli powder. Briefly fold all the ingredients


together and season well. 4. Spoon the mixture into the pre­


pared tins to about three-quarters full.


Do not smooth the tops. Sprinkle _ . , ,


the muffins with paprika and bake for 10-12 minutes, until risen and browned.


5. Meanwhile, combine all the ingredients together for the dill

sauce. Season to taste. 6. To serve, split open the hot fish muffins and place on a serving plate


of green salad leaves. Either drizzle the dill sauce over


the top or spoon the sauce into the opening. Serve at once.
