T A R T E T A R T IN - UPSIDE DOWN A P P LE P IE ^ with Styliani Chronopoulou
THIS week's recipe originally comes from the Loire Valley but is a big favourite of Styliani Chronopoulou (more familiarly known as Stella). Stella, who is Greek, and hails from Volos, in the centre of mainland
Greece, is working a t D. Byrne's Wine Merchants, in King Street. Stella is a qualified sommelier and
worked in the wine merchants three months before Christmas before
returning for another spell las t
month. However, she will soon be off
again, this time to work for Marco- Pierre White, a t his restaurant The Criterion Brasserie, Piccadilly, Lon don. Here her job will entail advising the customers on the wine she feels should accompany their meals and also serving it to them. While in Clitheroe Stella has man
aged to pursue her interests of swim ming and squash as well as walking. She has enjoyed her time in the
Ribble Valley very much and found the people very hospitable and friendly. She will be quite sorry to leave, but feels her move will be a good career opportunity. While in Clitheroe Stella has been
staying with Mr and Mrs Edwin Gretton, in West Bradford, and she has enjoyed making this Dish of the
Week recipe for them. TARTETATIN
Ingredients 0 4oz unsalted butter
O 3oz caster sugar 0 9-10 red eating apples
0 3 tsp vanilla essence 0 6oz. shortcrust pastry Method
1. Generously butter a lOin. flan
tin and sprinkle the sugar over it. 2. Peel, core and quarter the apples
and arrange round the flan tin, just overlapping, in concentric rings and sprinkle the vanilla essence on top of
the apples. 3. Dot the rest of the butter over
the top and put the flan tin on to a hot plate or gas ring for about 30-45 minutes. Watch over it very careful ly to check that the sugar caramelises evenly without burning; if necessary, move the tin from side to side of the ring to obtain even browning. ,
4. Leave to cool. 5. Roll out the shortcrust pastry
and cover the apples with it, glaze with beaten egg yolk and bake in a hot over (220C, 425P or gas 7) for 20
minutes. 6. Turn out and serve upside down
with the apples on top. 7. Serve a slice of the tarte on a
plate with a dollop of creme fraiche on the side and a mint leaf on top or with vanilla ice-cream. Below you will find two wines rec

tatin, Stella recommends two dessert wines. Stella is a qualified oenologist and sommelier and has
trained extensively in France a t the Wine College of Beaune, University of Burgundy, studying at the Jules Guyot's Vine and Wine Institute for a degree in oenology and biology, as well as actually harvesting grapes. Her first choice is a white wine from the Loire Valley -
Vouvray moellcux. A wine with fruit flavour, particularly of peaches and mangos, it has a very good strong finale. This wine is fine and elegant with very good acidity and
the potential to age for 50 years. The grape variety is chenin blanc and has a very nice
yellow/gold colour. When the wine is old, it becomes cop per coloured and has great complexity and more magmfi-
cence.

The second wine is Muscat de Rivesaltcs from the twin
town of Clitheroe, a sweet muscat from a big zone near Perpignan.
The grape varieties are muscat blanc a petits grams and ,
muscat d'Alexandrie. The estate is Domaine Forca Real and the vintage
1996.
This wine has a pale brilliant colour with a strong floral flavour of passion fruits and lemon. I t is very long and fat
,
in the mouth and has a very good balance. This is reasonably priced at £5.89 a half bottle, from D. Byrne's, and quite sufficient to have with tarte tatin.
