Christmas pudding. This pudding can be made at the
last minute. I t is different, but packed with fruit and with the tra ditional festive look and flavour,

THERE are numerous white wines around which suit all pockets and tastes, and if you are a definite white wine-only drinker you may have missed out on one special white grape variety. The Viognier is the grape variety
and its home is in the Northern Rhone village of Condrieu some 20-miles away from Hermitage. This is an expensive luxury, but hang the cost, it is Christmas! I t is expensive because of low
yields, which give a more intense flavour. In the Southern French styles from the Vin de Pays D'Oc this rarely shows through in wines around £5 to £6. The wines from Condrieu are around £7 to £22 a bottle with the tiny appelation of Chateau Gril- let, again a wine made from Viognier,

Britain - Lancashire" by the Rev. Michael Smout is now on sale and is
certainly packed with information. Some would be general knowledge
for a good many local people, but there are few who could not learn
something. For the tourist unfamiliar with
Lancashire, there is plenty of interest
on every page. The publishers say that the author,
an Anglican clergyman in Ormskirk, is "keen to emphasise that Lan-

cashire's austere, industrial mill towns often obscure a rich, varied,
often eerie past." Mr Smout proves the point but as
in nearly all such guides, inaccuracies are inevitable - the North West Sound Archive, for instance, covers a far wider area than just the Ribble Valley, despite the impression given in the book. Also, Waddow Hall is more than just a Girl Guides centre - it has international status.
But these are mere details. The
author's professional way of concisely explaining sometimes complex his toric and religious matters involving not just his own denomination but others as well adds stature to the guide. I t will compete strongly with other similar ones on the bookstalls, and has certainly added to this read er's knowledge of’Lancashire. T IM PROCTER

as the fattest chardonnay and should be drunk young, they do not gain anything from ageing. . I found all the above and more in a
Californian wine - Cline Viognier Los Carneros 1996 - a pure hedonistic experience. Drink slightly chilled, you don't want to kill the flavours and enjoy as an aperitif or pair with
your turkey this Christmas. The production is small, only 613
cases were produced and at the "rea sonable" price of £11.09, from D.
Byrne, this trine tastes like one twice
the price. The wine was partly cool ferment
ed in stainless steel, and partly in 500-litre American oak. The malolac- tic fermentation was blocked to keep in the fresh acidity and finally the wine spent five months prior to bot tling in smaller barrels aged on its lees (yeasty barrel bottom deposits). The pure dedication to keeping all those ethereal, fresh flavours trapped and locked in the bottle is worth the extra, which again must be reflected
in the price. Have a very vinibulous Christmas,
whatever your wine choice, and remember — life is too short to drink bad winel

light Christmas pudding may at first seem very complicated, but once you ave assembled all the ingredients, all of which she normally gets from Booths Supermarket, it is very easy
to make. LIGHT CHRISTMAS PUDDING
Ingredients
• loz. chopped nuts (not peanuts) O loz. chopped glace cherries • 2oz. chopped fresh candied peel 0 6oz. light sultanas 0 4oz. chopped crystallised ginger 0 4oz. chopped crystallised
pineapple cots
O 2oz; chopped ready to eat apri ■
0 4oz. c a s te r sug ar 0 3oz. SR flour
' ® 3oz. white breadcrumbs O 4oz. chopped suet (beef or
vegie) 0 2 large eggs
orange. . 0 salt, mixed spice and nutmeg to
taste. Grated rind of 1 lemon an 1/2
Juice of 1/2 orange and 1/4 pint of | .
light sherry or white wine. Method
1. Mix all the dry ingredients with
the fruit and nuts. 2. Beat the eggs with juice and sherry or wine, then mix with the dry
ingredients. 3. Grease a 2 and 1/2 pint pudding , basin and line with greaseproof paper
or silicone. ' 4. Pour the mixture into the basin and cover with greaseproof paper and tin foil. Steam for about four hours.
Leave to cool. 5. When ready to use, steam for |
another one hour and serve with your usual sauce or brandy butter.
