d e e p - f i l l e d m i n c e p i e s W IT H C H E E S Y P A S T R Y with BUTLER'S FARMHOUSE CHEESES, INGLEWHITE

THIS recipe for Dish of the Week provides a delicious twist on a Christmas classic. This year it seems that more

Lancashire cheese will have been consumed in Britain than ever before. While this is excel lent news for Lancashire cheese producers, the fact that Lan cashire cheese will see out 1997 as the fastest-growing regional cheese in Britain alongside Stil ton is the icing on the cake. Inglewhite-based Butlers

Farmhouse Cheeses, now the largest farmhouse territorial cheese producer in the UK, can arguably take the credit for intro

ducing the real taste of Lan cashire cheese to a far wider range of enthusiasts. So why not try these pies for a

change this Christmas? DEEP-FILLED MINCE PIES WITH CHEESY PASTRY

I WAS introduced to South African wine by my friend Norman Woffenden, who has been import

ing it for many years. South African wine has featured on the wine

list of the Auctioneer Restaurant for a very long time now and because of its quality we decided to sell it at Deli-Med. One estate in particular I would like to write

about is a small estate near to Stellenbosch called Rust en Vrede (Afrikaans for rest and peace), which was bought in 1980 by Jannie Englebrecht (and if you are a rugby fan like me you will know he was a former Springbok rugby player). From the day he took ownership of the estate, he set

out to make quality wines. One of the first decisions was to rip out all the

stock of Chenin~Blanc vines and to concentrate his efforts on red wines. His portfolio today consists of Tinta Barocca (a dry red made from one of the grapes used for making port), Shiraz, Merlot, Qabemet Sauvignon and the estate wine which is a

blend of the last three. French oak barrels have been imported to age the

wines and give them a distinctive flavour and in

estate to take over the wine-making. The vineyard has been particularly successful in

developing markets outside South Africa for its wines and was awarded the State President's Award

by President Mandella. The wines are 1995 Rust En Vrede Tinta Barocca
