port and Manchester, along with those from nearer home, which is a good indication of the service and quality the restaurant has a reputa tion for providing. The menu is changed daily and

doing all the cooking with the help of Terry, head chef David Gibbons joined them. Terry already knew of David's skills as a chef from their days together at Stirk House Hotel. So now David and Kath, with occasional help from Terry, manage to cope very well with preparing all the food for this

busy, elegant restaurant. Our Dish of the Week recipe is one

of David's favourite dishes and it is so easy to make.

fresh produce, the majority of which comes from local suppliers, is of prime importance. Every dish served in the restaurant is created on the premises, including a wonderful selec tion of sweets and puddings. Game and fish are always popular and Terry prides himself on the food being of excellent quality, not too fancy, beautifully presented, and nobody leaves the table feeling hun

again in Slaidburn. Set in remote but beautiful coun

tryside, the hotel has several well- appointed bedrooms, a small bar to have a pre-dinner drink and a delightful coffee lounge upstairs, with views over the valley and beyond.

RAFFLE AS we plunge headlong towards Christmas Day, With wine writer Mike Mur

have you thought what you might be drinking? On Christmas Day itself, start with a glass of cham

pagne - why not be self-indulgent! Or a nutty Palo Cor- tado sherry, even just your usual tipple, perhaps a gin and

, tonic or a glass of wine. Like you, I have not decided either, but one thing for sure, I will be ending Christmas Day lunch with a light

Christmas pudding and a glass of dessert wine. The choices are, thankfully, very varied - especially at

this time of the year shops do tend to stock a larger range than at other times due, in part, to a resurgence in dessert or pudding wines. Take any country you associate wine production with, and then add to your list Austria, Hun gary, Greece or Israel, and you will find a style or grape variety, produced as a dessert or pudding wine, to suit

your palate or purse. Dessert wines are produced in a "natural" way; that is .

to say the grapes are left on the vines longer to concen trate the flavours or to let botrytis set in. The other style is a fortified wine, which can be a naturally sweet wine, but with the addition of alcohol, which kills the natural

yeast cells, as in port production, for example. The MOSCATEL DE VALENCIA, from Tesco at £1.99

per half bottle, is a good-value, no-nonsense, wine with ripe orangey and dried mixed fruit flavours in a spinty finish, better suited to a rich Christmas cake perhaps? Not so the CRU DES ARROUCATS 1996, again in half bottles from Booths, this time at £3.55. The Appellation Controlee here is Saint-Croix-Du-

doch, a member of the Asso ciation of Wine Educators and founder of the Ribble Valley Wine Club.

sides, is stunning. Coming in at £4.39 per half bottle, this fortified wine can be kept open for several days - if it lasts that longl Made from the sun-baked muscat grapes with the addition of Pedro Ximenex (outlined in the sherry article) the colour is dark and the flavour concentrated. A small glass sipped gently has a curious mix of flavours: caramel, dates, treacle-toffee mingled with raisins and

nuts.

CHAMBERS RUTHERGLEN LIQUEUR MUSCAT at £5.39 per half bottle. At 19% alcohol by volume, this is the highest of the four. The spirityness of the wine comes through, but is in perfect balance with the muscat's con centrated mm and raisin fruit flavour and slight acidity, which lifts the finish so as not to give too much sweetness. There are also flavours of bitter orange in this a most

remarkable wine. Well, those are my choices. My selection is based upon

Mont, formed in 1936, covering dessert wines only from one region almost at the southern end of Bordeaux oppo site the great vineyards of Sautemes. This wine has the class of a Barsac or Sautemes, if a little lighter in style, but at a fraction of the price. Made from the semillon grape, this is a perfect match to the raisins in the pudding which are echoed in the wine. The dark brown of the MALAGA VIRGIN, from White-

the muscat family of grapes and the semillon, which work well with the rich dried fruits of the Christmas cake and Christmas pudding. You could also try a late harvested TOKAY PINOT GRIS from France or a TOKAY 5 PUT- TONYOS, from Hungary as a different alternative. As for me, well, a half bottle of sweet champagne would do nice- ly, but another surety is that after all that food and wine I will not be driving anywhere. -

I wish you all a festive happy Christmas and a hedonis tic New Year; cheers to you all!

AS the title suggests, this pro duction was truly amazing and, from the moment the curtain rose to the second it fell, I sat

totally enthralled. This was the first professionally-

produced musical I had seen, and it certainly would not have been out of place in the West End. The whole performance proved to be a wonder

ful experience. The show retells the Biblical story

of Joseph, his 11 brothers and the coat of many colours, and is packed with non-stop action, laughter, infec tious fun and some immortal tunes, including "Any Dream Will Do'\ "Close Ev'ry Door to Me" and One ■More Angel".

I loved the way each song had a

different style, and I was especially impressed with the way Jeremy Devall portrayed the Pharaoh as Elvis - complete with pelvic wiggle! Narrator Julie Maguire added to

the magical atmosphere by singing beautifully and clearly telling the story. Local boy Gavin Ashbury, from Leyland, made his professional debut playing brother Gad and the baker, and showed the makings of a true

professional. Joseph is the perfect treat for the

young and the young at heart. This joyously entertaining Bill Kenwright

production was a complete pleasure to watch from start to finish, and is guaranteed to bring a smile to your face, a tear to your eye and have you clapping and humming along. The cast - made up of the most

energetic company of actors, singers and dancers you will ever see - were absolutely fantastic and were reward ed with applause that seemed to go

on forever. This magnificent stage show was

truly mesmerising and I am certain that this, my debut musical experi ence, will not be my last.Jean Carlin
