Week, Susan Ferrari is shar- , ing with us her own recipe of Salmon, Smoked Salmon and Asparagus Terrine.


Susan and her husband,, Ginio,


have been at Ferrari’s Country House Hotel for 18 months. Pre­ viously they built up a thriving business at Ferrari’s Restaurant in Great Eccleston, and they now run the two in conjunction. While Ginio is at Great Eccles­


ton, Susan cooks the main courses, does the menu planning and organisation and also is on hand to welcome diners and guests, to Ferrari’s at Thomley. Susan prides herself on being


1 more-or-less self taught, although in her early years she worked for two very good chefs in Kent, learning by the hands-on method and being thrown into cooking at the deep end. Her Italian cookery skills were learned from-her husband’s


1 mother when she spent time visit­ ing Italy for long spells so her chil­ dren could get to know th e ir . grandmother. The refo re , the restuarant


boasts a selection of authentic Ital­ ian dishes with a mixture of tradi­ tional English and modem French cuisine.

used in the kitchen and everything is as fresh as possible. Favourite items on the menu


are Susan’s home-made pasta


dishes, of course, and also popular are the variety of-salad starters both warm and cold, the latest being the Englishman’s Delight which consists of a bed of dressed salad served with egg, bacon, black pudding and croutons. Another treat is the little filo pastry parcels of lamb. The bread and butter pudding and Ferrari’s Tipsy Ice, both laced with lashings of liqueurs, are among the tops on


the sweet menu. To complement the beautiful


exterior of the hotel, there is a delightful lounge and bar ideal for a pre-dinner cocktail and coffee afterwards. The dining room, which overlooks the garden is both comfortable and elegantly fur­ nished with immaculate table linen and crockery. SA L M O N , S M O K E D SALMON AND


ASPARAGUS TERRINE Ingredients


' .(serves 6 to 8)


• l ’/clb. salmon (skinned and boned)


• 3-4oz. thinly sliced smoked .


salmon • 6-10 pieces asparagus (depend­ ing upon their thickness)


FORCEMEAT


• '/alb. salmon (therefore in total 21b salmon is required)


• 1 small diced onion • 5 slices of white bread • 1 egg white. • 5fl. oz. cream


Method (For the forcemeat)


1. Place all the specified ingre­ dients into a food processor to form a paste

1. Line a baking tin/terrine dish with greaseproof paper 2. Slice the salmon into slices


of about 1cm in height, and form a layer on the base of the tin. 3. Cover this with a layer of smoked salmon and then a layer


of forcemeat. 4. Peel the asparagus and cut


about a cm from the base of the


stem. 5. Place the asparagus one next


to the other on top o f the


forcemeat. 6. Apply another layer of


forcemeat. 7. Place the remainder of the sliced salmon over the forcemeat


to cover. 8. Finally, cover the top of the


terrine with the rest of the


smoked salmon. 9. Cover with tin foil and place


in a bain-marie in a pre-heated oven (325C) for about one hour. 10. Leave to cool for several


hours, or overnight, and slice and serve when ready. Serve with a garnish of dressed


salad leaves and crusty bread.

TAKING part in crowd scenes and being regaled by actors is not the cup of tea of e very theatre-goer. But when top troupe the Royal


National Theatre came to town, local Shakespeare enthusiasts just


couldn’t get enough. A sparkling cast invited mem­


bers of the audience to join them in singing, dancing, clapping and


crowd scenes. Those who accepted the invita­


tion had been put through their paces in a special workshop beforehand. The actors brought “Twelfth


Night”, a rich and painful comedy about love and self-deception
