Fish is one of the nicest foods to


cook on a barbecue: my husband loves cooking sardines and trout


However, for those who don’t


like fish with bones, salmon is ideal cooked on a barbecue. This week’s recipe is one of four


featured in a new leaflet, “Sum- mer Scottish Salmon” , provided by the Scottish Salmon Board and available from fishmonger Giles Shaw, of Wellgate Fisheries, local stockist for salmon carrying the


Tartan Quality Mark. This recipe is easy to prepare


and cook, especially if you ask the fishmonger to skin the fish. I have served this salmon as a starter twice this weekend and it hits been voted delicious by friends and fam i ly who jo ined us fo r a barbecue.


MARINATED SCOTTISH SALMON KEBABS


(serves four) Ingredients


• ICoz Scottish salmon, cubed • 3 tsp runny honey • 3 tbsp white wine vinegar • 1 tsp mint, chopped


• 2 tsps tarragon, chopped • salt and pepper


Method 1. In a bowl, whisk together all


dressing ingredients. 2. Divide salmon cubes between four large skewers or eight small ones. 3. Brush salmon with dressing and barbecue, or grill indoors, for a total of four minutes, turning


once. A. Serve with green salad and saf­


fron rice for a refreshing sum­ mer dish. Chefs tip: Accompany with a chilled bottle of Rose d’Anjou.

S O U T H E R N Burgundy is where we find the Maconnais area, with its lov ely green coun-


t r y s id e an d a w e a l th o f R om a n e s q u e churches. I t is also home to Pouilly-Fuisse, St Veran and Macon Blanc Villages. The appellation of Macon consists of 43 villages,


some of the more familiar being Vire, Clesse, Davy and, my recommendation this week, Lugny. 1994 Macon Lugny (£(1.59) is produced by a very


famous old Burgundian “negotiant” , Louis Jadot. The company was established in 1859 and quickly


acquired a reputation for high-quality wines. In later years, the firm bought vineyards in the prestigious Grand Cru holdings. Most of Macon is planted with Chardonnay, but a


special clone has adapted itself to the area, which gives a unique floral, smoky muskiness. 1994 Macon Lugny has ail those qualities, as well as

richness and a lovely balance of fruit and acidity,


finishing with a clean, refreshing taste. 1994 was a terrific year for Burgundies, so if you


are not holidaying this week treat yourself to a spe­


cial bottle of wine. This one is perfect with most fish dishes and


chicken — or perhaps a glass or two while relaxing in the garden!
