Finding Comfort When Something Goes Awry

In searching out trends for this issue, I found that comfort food is predicted to be big for 2022. It was also a hit in 2021, and in 2020—what a coincidence.


Whether the comfort food you’re cooking is mashed


potatoes, hummus, fufu, or pho, chances are it’s made by heart, not by a carefully followed recipe, and if a little of one ingredient isn’t available, you can add a little of something else. That’s how you make it your own. It brings a little creativity as well as comfort into your day. That’s why Julia Child—not only a master chef, but an expert at living well—called it a pleasure to correct something gone awry. This issue is full of chefs, managers, providers, innovators, and leaders sharing what they do as we go into our third year of things going awry. You’re coping with supply chain issues, inflation, staff shortages, and more, but many of you also took the time to share what you’re doing about these and what you see up ahead. At Argentum, we thought of this as taking lemons and turning them into lemonade. Of course, some things simply can’t get a positive spin, and we don’t have to twist ourselves into shapes to try to give them one. But when we’re facing garden- variety “awry,” we get to grow. And I hope you can take pleasure in how you’ve managed that.
