Rational helps Signature Care Homes cook in bulk without losing the personal touch.


Signature Care Home Group currently operates ten care homes around London and the south of England. Rational’s cooking systems, the iCombi Pro combi-steamer, the iVario Pro technologically advanced bratt pan and the ConnectedCooking software management platform, are installed in its Beckenham location. Chris Burdett, Signature’s group food and beverage manager,


explains “Each community has the autonomy to create a menu that provides exactly what residents want, while covering a huge number of dietary requirements, like allergens and intolerances, as well as individual likes and dislikes.” While this will be familiar to many chefs, care home catering has additional challenges. “Meeting the needs of residents with conditions like dysphagia, loss of swallowing, is something everyone working in the care sector will be familiar with,” he says. “It’s important that we cater for these residents with food that they enjoy eating and that helps them to enjoy their life with dignity.” With a maximum of 800 residents to cater for daily, along with


staff and visitors, the kitchens at Beckenham need to be as fast and efficient as possible. Traditional appliances weren’t cutting it and were putting staff at risk. “Some of the issues we’ve faced in the past include burns, scalds, and staff hurting their backs lifting heavy pans,” says Chris. The cooking systems feature intelligent systems that


monitor and control the outcome of every meal. “They’re so simple to use,” says Chris. “We can just set the desired results, and away they go. It’s like having an extra chef in the kitchen, we know that whatever we ask them to do we’ll get consistently great results.” Chris continues “The iVario Pro really brings something new to our work here, you can use it to fry different things at the same time with one pan, while another pan is boiling potatoes or pasta. Then there’s the pressure-cooking function, which brings down the time it takes to prepare a stew from three hours to 45 minutes.” The precise temperature control also makes techniques like sous vide simple. “Some of our chefs come from Michelin starred restaurants and want to be able to use those advanced skills here,” says Chris. “The beauty of the iVario Pro is that it lets chefs use a breadth of techniques that would otherwise require many different pieces of cooking equipment.” The iCombi Pro is having a similar effect. “The iCombi Pro has


really revolutionised how we work,” says Chris. “For example, we can cook a variety of breakfast items at the same time and not have to worry about constantly checking they don’t burn. Or we can set it up to slow roast something overnight, which frees up a lot of time during the day.” Both appliances record complete operating data, which can be


accessed via ConnectedCooking. “At the touch of a button I can bring up the full status of all our Rational cooking systems, including HACCP data, service and cleaning information, as well as updating or adding new recipes,” says Chris. “It helps us maintain high standards, and will help us to spot any service issues and get them fixed before they get too serious.” Rational’s aftercare support and training was another important factor behind Signature’s decision to use them. “The aftercare support we get from Rational is invaluable,” says Chris. “Whether it’s organising training visits or knowing
