Harvesting..

The farm uses supplement from ChampFood. Total production is around 5,5 to 6 tons.

Local and organic The farm produces organic mushrooms, a market that is growing rapidly, but according to Auer is now developing more slowly in Austria because of the economy. “Consumers are now paying a little more attention to price than usual, and a kilo of organic mushrooms costs between 13 and 14 euros, while regular mushrooms cost 3 to 4 euros per kilo.” But in Austria, a grower has an

important advantage over a country like the Netherlands, for example, and that is the origin of the mushrooms. “Most consumers in our country find it very important that the product comes from their own country, that origin is also very clearly stated on the mushroom packaging. You see that connection with ‘local’ much less in other countries. That does not mean that we can sit back, because product quality is also very important for our market.”

Lego masterplan At the moment, the main goal of the farm is to continue to grow, to educate everyone, and to keep the quality at a high level in the five rooms that are now in production, but DMP has made a master plan for 20 rooms. Auer: “We will see what the coming years will bring. If we expand, we’ll do it in steps, and in separate buildings. Just like Lego bricks, step by step, brick by brick.” He clearly feels responsible for the success. Isn’t that what he wanted? Laughing: “Yes, but it’s my head that’s under the guillotine!”
