Recipes that go a long way Egg Muffins: this is a fun, healthy on the go breakfast

option with much variety. I simply beat eggs and pour it in a muffin tray with all sorts of toppings. One can use ham, spinach, mushrooms, cheese, spring onions and pop it in the oven. It’s something different and fun which makes breakfast a faster process.

Chicken fried rice: it’s a quick and easy lunch recipe for me, it involves a one pot cook with lots of veggies, diced chicken and a few humble spices. It’s a complete meal that doesn’t require much washing thereafter and kids love it.

Noodle salad: kids like interesting and colourful foods. Noodles are a definitely favourite and watching them slurp it can be fun. Introducing your kids to fruit and veg at a young age is important to developing healthy habits. I like to do a tossed noodle salad with different veggies.

Mommy Inspirations It’s not necessary to take inspirations from a celebrity,

but I do try to look at the positives of people around me. Friends and family play a big role in shaping that, especially my friends who are young mothers just like me. Sometimes talking and sharing tips with each other can really help. ‘I tend to take inspiration from celebrity women like Kate Middleton and Princess Diana for their kindness and grace. They have a certain poise and elegance that I find very inspiring’ says Yashoda.
