STEPHEN Osbourn, chef at Royal Albion Hotel in Maidstone, has won a Best of British chef competition. The contest was launched


by food supplier Brakes and Kent brewer Shepherd


Neame, whose chefs were asked to submit recipes, costings and photo- graphs of two


innovative dishes using British ingredients supplied by Brakes. Finalists Ellina Smith from


The Wharf, Dartford; Shephen Harmsworth from the Marine Hotel, Tankerton joined Stephen for a final ‘cook off’. Stephen created an


outstanding meal of roast cod rarebit on leek and thyme potato cakes with pea pureé with red amaranth and fish foam, followed by a baked Stilton and Bramley apple cheesecake on a poppy seed


and walnut base with balsamic dressed strawberries, all produced entirely from British ingredients. ‘Best of British 2011’ winner


Stephen Osbourn received a one-to-one tuition course from celebrity chef Richard Philips and a three piece global kitchen knife set as his prize. Head of food marketing


at Brakes, Sally Sturley said: “The calibre of entries in this year’s competition was extremely high - demonstrating strong support amongst British pubs for British products. Kent is especially famous for its orchards and farms which supply fresh fruit and vegetables across the country. “Contestants produced


unique, tasty dishes - showcasing the ‘Best of British’. It was a difficult task for the judges to choose a winner but Stephen made exceptional use of all British ingredients and created a stunning two-course meal, which won him the title.”
