scream, you scream, we all scream for ice cream! What says summer better than that old rhyme? Some of my favorite childhood memories are


of my dad making homemade ice cream. It was always vanilla, never anything fancy, but my, oh my, how delicious. Fortunately, by the time I was old enough to take my turn at the crank, we had an electric ice cream maker.


EZ Homemade Vanilla Ice Cream  


Ingredients: 1 cup milk 1/2 cup sugar Dash of salt


2/3 cup half & half 1/3 cup whipping cream 1/2 tsp. vanilla


Directions: Combine milk, sugar and salt. Stir with wire whisk until sugar is dissolved. Stir in half & half, whipping cream and vanilla. Pour into your ice cream maker and follow directions.


Makes one (1) quart. Increase portions as necessary for your size freezer.

 as is the next one for Black Walnut Ice Cream. Black Walnut is one of my favorite  of "junket tablets." I welcome advice from OEC members with more cooking experience than I, on what to do if I can't 

Cinnamon Ice Cream


 


Make a cinnamon syrup: 1 cup sugar, generous amount 1 1/2 Tbsps. cinnamon


Combine in a saucepan and cook over low heat, stirring constantly until smooth and the sugar is dissolved. Set aside and chill. (Can be made ahead of time.)


Ingredients: 3 cups milk 3/4 cup sugar 1 egg yolk, beaten


2 cups heavy cream 1 tsp. vanilla


Directions: Scald milk, stir in the sugar and stir until dissolved. Pour slowly over the beaten egg yolk. Return mixture to the pan and cook until slightly thickened. Chill.


Combine syrup and milk mixture. Add heavy cream and vanilla.


Freeze in an ice cream maker according to manufacturer's directions. Note: I double this recipe as it only makes about half a standard freezer full.


 


Ingredients: 2 1/2 qts. whole milk 1 pt. whipping cream 2 3/4 cups sugar Dash of salt


2 Tbsps. vanilla 1 cup chopped walnuts 4 eggs 4 junket tablets


Directions: Put milk in saucepan. Whip cream, whip eggs, add sugar, salt, vanilla, walnut goodies and add to milk in pan, then warm. Dissolve junket tablets in 1 Tbsp. cold water and add to pan. Then let set for 10 to 15 minutes.
