Chicken Salad Contributed by Effie Daniels, CEC’S Holiday Collections Cookbook


5 chicken leg quarters 1 lg. onion, chopped


2 T salt 6 ribs celery, chopped


1 med. dill pickle, diced 1 tsp. black pepper 6 sm. sweet pickles, diced 3 T dill pickle juice ¼ c. sweet pickle juice 1 ½ c. mayonnaise


1 lg. onion, finely diced


Boil leg quarters with onion and celery, salt and pepper. Remove chicken when done, let cool and debone. Mix deboned chicken and ingredients in food processor, pulse in short bursts until well mixed.

3 c. dirt of your choice ½ c. small pebbles 1 c. water ¼ c. sand


½ c. pretty flowers


Combine dirt, and water and stir gently until thick, season with sand. Shape into small pies. Top with small pebbles and pretty flowers. Bake in hot sun until crisp. Do not eat!
