When Emirates commenced its new route between Dubai and Madrid last year it took a very special Spanish chef on board. Jo Austin gets a taste


Chef Santi Santamaria has come a long way since his humble beginnings in Sant Celoni, Barcelona and has taken the world by storm with his gastronomic creations and his passion for Catalan cuisine. In 1994, his restaurant Can Fabes in Barcelona received three Michelin stars and his second restaurant Santceloni has been awarded two stars and has rapidly risen to the top of Madrid ‘s gourmet food scene. Wishing to add a little local taste to its new


route, Emirates invited Chef Santi to personally create dishes for the airline, bringing his lifelong vision for perfecting the art of traditional Spanish cuisine to connoisseurs in the air. Chef Santi’s epicurean delights can now be enjoyed by First and Business passengers travelling between Dubai and Madrid over a three-course offering. Emirates has also partnered with Santi’s award-winning restaurant Ossiano, based in Dubai’s Atlantic, The Palm. Ossiano is Santi’s first restaurant outside Spain.
