1 lb boneless pork chops 1 (11 oz) can mandarin oranges in light syrup cooking spray


2 tbsp soy sauce 1 (8.8 oz) pkg 90 second brown rice 2 cups frozen mixed vegetables


STEP 1 Cut the pork into ½-inch cubes. Drain the mandarin oranges and reserve 2 tbsp syrup. Coat a large, heavy bottom skillet with cooking spray and place over medium-high heat. STEP 2 Add pork cubes to the pan and cook for 4 min., or until browned. Add the soy sauce and reserved mandarin syrup. Reduce heat to medium and stir until pork is coated. While pork cooks, prepare rice according to package directions. STEP 3 Add rice and mixed vegetables to the pan and stir-fry over high heat for 3 min. Add the mandarin oranges and stir to combine. Divide among 4 bowls.
