onions IN SEASON
All-purpose
• YELLOW ONIONS These kitchen staples offer the ideal balance of sharp and sweet flavors. They become sweeter the longer they cook.
• WHITE ONIONS These tender onions have
a bite and work well diced in salsas or topped on chili and hot dogs.
• RED ONIONS Commonly served raw, red
onions bring a brightness and crunch to salads, salsas, and sandwiches.
• SHALLOTS With their small oval shape
and pink-orange skin, shallots are known for their delicate taste and texture.
• PEARL ONIONS No matter what color, these
bite-size varieties are tasty slow roasted or pickled.
• GREEN ONIONS Slice them raw as a fresh
garnish or grill them whole for a sweet snack.
Affordable You can select them individually or buy them in bags. Either way, onions are cost-effective and long lasting when kept in a cool, dry place.
Heart healthy Studies show that onions are great for stabilizing cholesterol and reducing the risk of heart disease. Try to have about 1 cup of chopped onion a day. Raw is better but cooked works well, too.
Onions play a supporting role in countless dishes, but it’s time to make them the star. When cooked, they have an irresistably sweet flavor that’s worth celebrating.
