their quality provisions”, adds Joaquin, who supervises picking and inspects the quality.
The yield produced by three flushes is around 28 kg/m2, which results in a weekly total of just over 20 tons of mushrooms. Half of that is supplied with the stalk intact, the other half with the stalk removed. The first flush in particular steers towards the highest possible percentage of mushrooms with a cap diameter of 5 to 7 cm, 60% of the weekly total volume, while 25% is harvested sized between 3 and 5 cm. The remaining 15% is destined for the preserving industry, although a large proportion would certainly be acceptable for the fresh market in markets with lower quality standards. The good prices for high quality produce compen- sate this.
A total of 27 people work at Champigraja. As well as the three brothers who are responsible for the day to day running of the farm, the founders still play an active role by supplying and removing the containers. Two employees are on general duties and there are 20 pickers. “Picking is an area we have focussed on a lot in recent years, and we definitely want to modernise this part of process. We currently use second-hand picking platforms that auto- matically lift and lower, but we are considering buying automatically driven versions so we can increase efficiency and picking performance even more”, says Mario.
Champigraja is ready for the future, and at present is one of the most advanced and forward-thinking farms in Spain.
