Here are some of the initiatives being implemented: 1. Electricity decreased 17% per occupied room:
• Over 600 guest room & bath lighting converted to more efficient fluorescents • Programmable thermostats in guest rooms • Energy saving settings on all computers & televisions • Occupancy controlled lighting in low use areas
2. Natural gas decreased 30% per occupied room:
• Ozone laundry system lowers water heating needs • Linen conservation program saves heated water • Improved insulation, door & window sealing • Reduced cooling schedules for public areas in summer months
3. Recycling & Waste Reduction:
• 85% reduction of waste to landfill since 2007 • Organic waste composted at all food & beverage outlets (~150,000 lbs. annually) • Comprehensive recycling program, including guest rooms (~90,000 lbs annually) • Hard to recycle materials recycled at Charm facility (~10,000 lbs. annually) • Deep fryer oil collected and recycled • Paperless check-in • Conversion of all to-go containers to corn- or potato-based materials and/or post-consumer recycled content • Office paper products are a minimum of 30% post-consumer content
• Conversion from paper towels to cloth towels in public restrooms • Compostable key cards
As you can see, the St. Julien is certainly making great strides to
preserve the environment with these ecofriendly initiatives. Although it may be hard to leave the beautiful sanctuary of
the St. Julien Resort, you can’t miss out on all that Boulder has to offer. One of my top favorite cities we visited on this trip, I was amazed by the diversity of restaurants and shopping. For a fantastic farm to table experience, head to Salt where local organic produce is sourced from their own Soul Patch Farm in collaboration with David Asbury’s Full Circle Farm. I was excited to learn that they are a 99% GMO free kitchen! Even the materials used to design SALT were 100% recycled and made by local artisans. We tried the Crispy Prosciutto Fig Flatbread with mascarpone, arugula, and onion jam and the Rotisserie Rocky Chicken Breast with soft po- lenta, olives, sundried tomato, onion jus, and capers and both were amazing. Other spots to hit are: The Kitchen, PMG, and Riff’s. And don’t miss Mountain Sun Pub and Brewery, one of the
coolest places I’ve been in a long time. They offer fresh, high quality pub fare and finely crafted brews for affordable prices in an envi- ronment that’s comfortable like your living room. You won’t find any televisions because they want customers to meet and discuss the world or simply to play Scrabble. And don’t bring your credit card because it’s cash or check – and yes, you can write an out of state check there – because they believe karma will take care of it all. Great beer and great concept.
