our children’s birthdays, christenings and naming ceremonies are special occasions and Mandy Dunn of Beautiful Birthday Cakes crafts delightful creations that are almost too good to cut.


Over the past 10 years she has created over 500 different cake designs, each one tailored beautifully to the person whose special day it was. Browsing through her website www.bbcakes.co.uk is a truly mouthwatering experience.


Tractors, princesses, ballerinas, cars, planes, dogs, cats, horses, elephants, superheroes, and sports, she’s done them all. Each design is beautifully wrapped around a home-baked cake. From classic Victoria sponge to luscious chocolate or lemon cake, all layered with buttercream and jam as required.

Simply Scrumptious


Cupcakes... Makes 12 cakes: The all-in-one method makes these delightful treats an absolute dream to bake. Little ones will love helping with the simple, but quite stunning decorations. For the cakes:


100g self raising flour 100g softened butter 100g caster sugar 2 large free range eggs 1 teaspoon baking powder 1 dessert spoon cocoa powder, dissolved in a little boiled water


For the buttercream:


100g softened butter 100g icing sugar Few drops vanilla extract 1 dessert spoon cocoa powder


To decorate:


2 chocolate flakes 6 maltesers


Gold and pearl balls


1) Place all of the ingredients for the cakes apart from the cocoa into a mixing bowl. Using a hand mixer, whisk on a medium speed until combined and light and fluffy.


2) Carefully spoon half of the mixture into 6 cupcake cases.


3) Add the cocoa and mix thoroughly to combine. Spoon the remaining mixture into the 6 remaining cases.


4) Bake at 180°C (160 fan) for about 20 mins.


5) Meanwhile, make the buttercream by combining butter icing sugar and vanilla extract.


6) Put half of the buttercream aside and add the cocoa to the remaining mixture. Mix thoroughly.


7) When the cakes are cool, pipe vanilla and chocolate swirls on top and decorate with the flakes, Maltesers and sugar balls.
