I met chef and owner of Bistro 58, David Gaughan recently. David, pictured right, has over 25 years experience as a chef and in his previous role working for the Hatton Hotel Group as Head Chef of the Cornerhouse Hotel in Taunton, where he won the company’s first ever AA Rosette award.

Originally hailing from Lanca- shire, and still with a soft north country burr despite many years in the west country David told me he loves Chipping Sodbury, its antiquity and the fact that there are so many independent shops here.

Using West Country suppliers, Bistro 58 aims to provide a great dining experience, whatever the occasion. By using the best range of ingredients, preparing it and presenting it with skill and attention to


detail, the restaurant has already had a great recep- tion, many customers particularly remarking on the quality of the breakfasts and the steaks (David told me all beef is hung for 28 days).


I visited in the afternoon and was impressed with the presentation of the very popular range of omelette meals (starting from under £4 for a 3 free- range egg omelette with homemade chips salad and coleslaw). During the daytime until 5.30pm there is also homemade Soup, freshly made Sandwiches and Ciabatta, homemade Burgers using 100% steak , Salads. Pasta dishes and English classics such as Beer-battered Cod, Bub- ble and Squeak cake with crispy bacon and free-range egg and Toad in the Hole.
