the space features exposed brickwork, reclaimed wood, and warm earthy tones. A striking white marble bar serves over 500 Italian wines to complement the light fare of artisan charcuterie and cheeses. Jaleo meanwhile, is a vibrant Spanish-


style eatery headed up by José Andrés, the chef often credited with bringing tapas to America some twenty years ago. Designed by Rockwell Group with artistic direction from Spanish designer Juli Capella, the restaurant has an alluring energy provided by the playful interiors and theatrical showpiece paella grill. Terrazzo flooring incorporates bronze patterns of seafood, shrimp, olives and napkins – a decorative play on the whimsical tradition of tossing things on the floor at tapas bars in Spain – while intricate laser-cut embroidery patterns adorn on the walls. Perched on a raised platform beyond the grill, the main dining area is bedecked in brightly coloured


upholstery in a hotchpotch of patterns inspired by the mantilla, a handcrafted shawl. With Andrés’ guidance, nearly all of the elements in the restaurant, including platewear and curios, are sourced from Spain for authenticity. The chef’s second restaurant within The Cosmopolitan – China Poblano designed by SEED – is an unlikely fusion of Chinese and Mexican street food featuring design elements from both cultures.


Each of the F&B outlets – there are many more than detailed here – take on their own unique character having been designed by different practices, yet the blending of one space to the next is seamless. The distinctly different experiences offered by each could keep any willing guest on site for a fortnight, a clever move in a struggling Strip.
